Aloo Bhendi Masala

Aloo Bhendi Masala is a recipe of potatoes and ladies finger/okra mixed with some spices..This is a very easy to make mouth watering and healthy recipe which i learned from my dear Bou(In Odisha, we call our Mother as bou..:))

The taste of this recipe is awesome and u can try it out as a side dish...

Ingredients
  1. Potato - 1 medium
  2. Ladies Finger/Okra - 10
  3. Onion - 1 small
  4. Garlic - 5 flakes
  5. Tomato - 1 big
  6. Turmeric powder - 1 tsp
  7. Roasted cumin powder - 1/2 tsp
  8. Coriander powder - 1/2 tsp
  9. Red chilli powder - 1/2 tsp
  10. Pancha Phutana - 1/2 tsp
  11. Salt to taste
  12. Mustard oil
  13. Water
  14. Few chopped coriander leaves
Method
  1. Chop onion and tomato roughly, peel the garlic flakes.
  2. Divide the chopped tomatoes in to two parts.
  3. Grind one part of the tomatoes with onion and garlic in to a smooth paste.
  4. Keep the other part away for later use.
  5. Wash the potato and okras in water and pat dry them by using kitchen towel.
  6. Cut the okras in to 1'' length pieces by cutting their head and tail a bit.
  7. Peel the potato and cut them in to cubes.
  8. Heat oil in a pan and arrange the okra pieces to cook them in medium to low flame.
  9. Turn/toss to ensure even cooking for 5 min.
  10. Carefully keep them in a plate.
  11. Now add potato cubes to the same pan and cook them in remaining oil till the cubes become light brown in color. It will take another 5 min in medium flame..Keep the potato cubes in another plate.
  12. Add little more oil approx 1 tbsp to the same pan and heat it.
  13. Add pancha phutana to the hot oil and wait for it to crackle.
  14. Then add the ground paste, chopped tomatoes, red chilli powder and little water to the pan.
  15. Cook it by adding turmeric powder and coriander powder.
  16. Cook till oil evaporatesand raw smell goes away from the masala.It will take another 5-6 min in medium flame.Add approx 1/2 cup water with fried potato cubes and okra pieces.
  17. Cook in medium flame  for 2-3 min more till the masala coats the pieces.
  18. Add and mix roasted cumin powder.
  19. Garnish with chopped coriander leaves.
  20. Serve hot with Roti/Chapati/Paratha/Rice/Pakhal.
