Malpua

Malpua is the Indian version of pancake which is a very popular sweet dish all over the country..also served to Lord Jagannath..:-)
Ingredients :-

Batter :

  1. Wheat flour (Atta) - 1/2 cup
  2. All Purpose flour (Maida) - 1/2 cup
  3. Semolina (Sooji) - 1/4 cup
  4. Banana - 2 Medium sized, mashed well
  5. Milk - 1 1/2 cup
  6. Sugar - 1/2 cup

Syrup :

  1. Sugar - 1 1/2 cup
  2. Water - 1 1/2 cup

Garnishing :

  1. Pistachios
Method :-


  • Mixed everything written under batter properly.
  • Add milk little by little, the batter should not be runny, it should be little thick, so that when we pour a ladle in oil, it should hold shape of a circle.
  • Keep the batter for 3-4 hours.
  • Prepare the syrup of 1 string consistency and keep warm.
  • Take a pan and add enough oil, once the oil is hot slow the fire and keep that way to fry the malpuas in slow to medium heat..
  • Now take a ladle full of batter and pour it in to the oil, make sure its not too thin.
  • It will slowly come up, cook it from both sides for 1-2 min.
  • Flip it only once, do not turn multiple times else it will break apart.
  • Once golden brown, drain and dip it directly to the syrup and let it be there for 8-10 sec and remove.
  • Serve it warm garnished with chopped pistachio, we can have this cold but then the syrup will crystallize, so have it according to your choice..enjoy...:-)
