Methi Thepla is a very famous food of Gujarati cuisine.They are light and healthy, a good snack for kids.Whenever you buy methi/fenugreek leaves, always pluck the leaves from the stems and keep them in air tight container or zip lock bag in the fridge, so that the leaves stay fresh for 4-5 days.

- Wheat Flour(Atta) - 1 cup
- Gram Flour(Besan) - 1 cup
- Fresh Fenugreek Leaves - 1 cup, chopped
- Curd - 2 tbsp
- Green Chilli + Ginger Paste - 1 tsp
- Cumin powder - 1 tsp
- Coriander powder - 1 tsp
- Turmeric powder - 1/4 tsp
- Chilli powder - 1/2 tsp
- Oil - 2 tbsp
- Wheat flour for rolling
- Oil/Ghee for cooking
- Salt to taste
Method :-
- Combine all the ingredients in a bowl and knead in to a soft, smooth dough using water only if required.
- Keep aside for 15 minutes by covering it with a towel.
- Divide the dough in to equal sized balls and roll each ball thinly in to flat discs.
- Heat a frying pan or tawa and place the thepla on the pan.
- When one side is half cooked, flip it.
- Apply 1/2 or 1 tsp oil on the cooked side and flip it again.
- Apply oil on the other side too.
- Flip twice.Once the thepla is cooked as well as browned, remove from the pan.
- Make all the theplas in this way.
- Serve hot with pickle,curd or with any curry.
- You can also have it with tea....enjoy.. :-)
