Ghanta Tarkari

Ghanta Tarkari is a very famous Odia version of mix veg curry..Its a very delicious, healthy and traditional recipe. This recipe is usually made during a festival known as Dwitiya Osha in Odisha.

Ingredients :-

  • Potato - 1 medium sized (washed, peeled and cubed)
  • Brinjal - 1 medium sized (washed and cubed)
  • Raw Banana - 1 (washed, peeled and cubed)
  • Pumpkin - 200 gm (washed, peeled and cubed)
  • Yam - 50 gm (washed, peeled and cubed)
  • Long Beans - 100 gm (cut in to 1'' size)
  • Drumstick - 2 (washed, peeled and cut in to 2'' size)
  • Carrot - 100 gm (washed, peeled and cubed)
  • Tomato - 1 (chopped)
  • Coconut - 1/2 (chopped)
  • White Chickpeas, Bengal Gram, Black Chickpeas - 1/2 cup (soaked overnight)
  • Green Gram - 1/4 cup(sprouted) 
  • Bay Leaf - 2
  • Onion - 1 (sliced)
  • Garlic - 7-8 cloves (minced)
  • Ginger - 1'' (minced)
  • Dry Red Chilli - 2 to 3
  • Turmeric Powder - 1 tsp
  • Roasted Cumin + Dry Red Chilli powder - 2 tsp
  • Garam masala powder - 1 tsp
  • Ghee - 1 tbsp
  • Oil - 2 tsp
  • Pancha Phutana - 1 tsp
  • Chopped coriander leaves
  • Salt to taste

Method :-

  1. Heat a handi and boil all the vegetables with salt, turmeric powder and water by covering the lid.
  2. Add white chickpeas, Bengal Gram, Black Chickpeas with water in a pressure cooker and cook for 2 whistles in slow flame.
  3. Heat oil in a kadhai , fry white chickpeas, Bengal Gram, Black Chickpeas and sprouted green gram by adding salt to taste. Fry for 5-8 min.
  4. Now add the fried grams, chopped coconuts, sliced onions, tomato and ginger to the vegetables.
  5. Boil these till all things get cooked and keep aside.
  6. Heat ghee in a Kadhai, add dry red chillies, bay leaves and pancha phutana.
  7. When they will start crackling, add the cooked vegetables, roasted cumin + dry red chilli powder, garam masala powder and chopped coriander leaves.
  8. Stir and mix properly. Cook for 2-3 min more and switch off the flame.
  9. Serve hot with rice/roti/paratha....enjoy... :-)
