Besan Ke Laddoo

I first got a chance to taste these yum Besan laddoos 9 years back, when i was staying in Chennai..My friend brought it from her home and gave me, it was so delicious i could not resist my taste buds and had almost 4 laddoos at once...My friend later told me the whole process of making these Besan laddoos for what i am very much thankful to her...:-)

The key for making good besan laddoos is to fry the besan till the rawness disappears. Besan roasted in a generous amount of ghee and mixed with cardamom and saffron flavored sugar syrup makes these yummy besan ke laddoos..It is very simple to make and can be store in air tight container for later use..

Ingredients :-

Makes 24 laddoos
  • Besan or bengal gram flour - 2 cups
  • Sugar - 1 cup
  • Water - 1/4 cup
  • Ghee, melted - 1/4 cup
  • Cardamom Powder - 3/4 tsp
  • Saffron - 5-6 strands
  • Ghee - 1 tbsp
  • Few raisins for garnishing

Method :-
  1. Heat a heavy bottomed vessel and add besan.
  2. Roast on low flame for 5 minutes, then add the melted ghee and further roast for 12-15 minute till you get a very nice aroma.Turn off heat and let it cool.
  3. For making the syrup, take a pan and add sugar and water to it. Cook for 5-6 minutes till a thin syrup is formed. Add  and mix saffron and cardamom powder.
  4. Add this syrup to the roasted besan and mix properly. 
  5. Let it cool till warm enough to handle.
  6. Grease your hand with ghee, take a small portion of the besan mixture and shape in to a round ball.
  7. Repeat the same process with all the besan mixture. Garnish them with raisins.
  8. Cool completely before storing in to air tight container. It can be stored for 3-4 days outside and for 1 week within a refrigerator.
  9. Serve these melt in mouth yummy laddoos and enjoy...:-)
