Papad Ki Sabzi

Its a delicious curry and belongs to Rajasthani cuisines..This recipe is very easy to make and without using onion, ginger, garlic, tomato or any vegies, u can make this simple yet spicy and yummy curry as a side dish for roti/rice..

Ingredients :-

  • Sour Curd/Yogurt - 1 1/2 cups
  • Bikaneri Papad - 3
  • Gram Flour(Besan) - 3/4 tbsp
  • Turmeric Powder - 1/2 tsp
  • Red Chilli Powder - 3/4 tsp
  • Ghee - 2 1/2 tbsp
  • Cumin + Mustard Seed - 1 tsp
  • Coriander Powder - 1 1/2 tsp
  • Asafoetida - 1/2 tsp
  • Dried Red Chilli, broken - 2
  • Garam Masala Powder - 1/2 tsp
  • Salt to taste


Method :-

  1. In a large bowl combine curd, gram flour, turmeric powder, red chilli powder and salt.
  2. Add 2 cups of water and mix it properly. Strain and set aside.
  3. Heat ghee in a pan/kadhai and add cumin + mustard seeds.
  4. When it changes colour, add dried red  chillies and coriander powder. Saute for 1 minute.
  5. Add asafoetida and saute again for 1/2 minute.
  6. Now add curd mixture to it and stir continuously till it boils.
  7. Reduce heat and simmer for 2 minutes.
  8. Roast the papads and roughly break them in to two inch pieces.
  9. Add these papads in to the simmering curd mixture and boil for 2-3 minutes.
  10. Add garam masala powder and mix.
  11. Serve hot with roti/rice as a side dish and enjoy...:-)
