Kau Macha Fulakobi Tarkari (Climbing Gourami Fish and Cauliflower Curry)

Kau Macha or climbing gouramis are so named due to their ability of climbing out of the water and walk short distances...Kau macha is a yet another favorite fish from my childhood days..I love each and every item of this fish..During my childhood i ate this Kau macha fulakobi(cauliflower) tarkari made by my Grand Mom very often...I love Kau macha besara and Kau macha gota bhaja as well...This is a very delicious and rich in flavor curry to try with hot rice....so try it and enjoy...:-)

Ingredients :-
  • Kau Macha - 4
  • Fulakobi(Cauliflower) - 10 big florets
  • Potato - 1 big
  • Onion - 1 big
  • Ginger - 1''
  • Tomato - 1
  • Green chilli - 2, cut in half
  • Cumin powder - 1/2 tsp
  • Coriander powder - 1 tsp
  • Kashmiri Red chilli powder - 1/2 tsp
  • Garam masala powder - 1/2 tsp
  • Turmeric powder - 2 tsp
  • Clove - 4
  • Bay Leaf  -2
  • Sugar - 1 tsp + 1 pinch
  • Salt to taste
  • Mustard oil
  • Few chopped coriander leaves for garnishing

Method :-
  • Wash the fish properly and marinate with salt, 1/2 tsp turmeric powder and mustard oil.Keep aside for 10 min.
  • Soak the cauliflower florets in warm water mixed with 1 tsp turmeric powder for 5 min. It will help you to get rid of any tiny insects that may be present deep inside the florets.
  • Peel the skin of the potato and cut it in to half lengthwise and then in to narrow wedges about 1'' thick.
  • Heat oil in a pan and fry the cauliflower florets with potato wedges till light brown in color. Take out and keep aside in a plate.
  • In the same pan add little more oil and fry the marinated fishes till light brown. Take them out in to a plate and keep aside.
  • Cut half  of the onion in to thin strips and grind the other half with 1'' ginger to make a smooth paste.
  • Heat some more oil to the pan and add 1/2 tsp sugar to caramelize which gives the curry a nice aroma as well as a very vibrant color.
  • At this moment add cloves and bay leaves with the thin strips of onion.
  • Fry them till light brown in color and add kashmiri red chilli powder to it.
  • Fry a little, then add chopped tomatoes with the ground paste.
  • Add  the remaining turmeric powder,cumin powder and coriander powder to the above.
  • Fry the masala till the oil oozes out.

  • Now add fried cauliflower florets and potato wedges to the pan and fry till the masala coats them well.
  • Then add water with salt to taste and cook the above in low flame by covering the lid till potato wedges and cauliflower florets become tender.
  • Now add fried fish with garam masala and green chilli and cook for 4-5 min.
  • Switch off the flame and garnish with chopped coriander leaves.
  • Serve hot with plain rice and enjoy...:-)
*Note :-
  • Kau macha is very tricky to handle as its very slimy..So its best to remove gills and prepare it by your fish monger.
