Grape and Orange Cake

It's Holi today, the festival of colors, everyone is in a mood to enjoy, even the climate is wow, sun has been shining with all brilliance, a strong breeze rustles the trees tops and bushes, the birds chirp continuously as they fly from one end to the other. By seeing the laughter and shouting of everyone with colorful faces and hands made my day. I decided to show my love through baking again, but then the question is ''How''; as i don't want extra fat, so decided to make an egg less butter less fruit cake.. 



As the market is flooded with black grapes and oranges, i decided to make a cake using them. The resulting cake is delicious, sumptuous, moist and load with juicy grapes that burst in mouth with every bite.. :-)


Ingredients :-
  • All purpose flour/maida - 1 1/2 cups
  • Baking powder - 1 1/2 tsp
  • Eno fruit salt - 1/4 tsp
  • Salt - 1/2 tsp
  • Powdered sugar - 1/2 cup
  • Sweetened Milkmaid - 1 tbsp
  • Curd, beaten - 2 tbsp
  • Orange juice - 2 tbsp
  • Orange zest - 1 tsp
  • Sweet lime juice - 1 tbsp
  • Honey - 1 tsp
  • Refined oil (sunflower) - 1/3 cup
  • Grapes (black) - 1 cup 
  • Mango jam - 1/4 cup for topping, (You can use orange marmalade too)



Method :-
  • Preheat oven to 180 degree for 10 minutes. 
  • Grease the sides and bottom of one 8'' round cake pan with oil.
  • Sprinkle little flour over it. Keep aside.
  • Sieve flour and the next 4 dry ingredients in to a bowl. 
  • In another bowl, mix next  7  wet ingredients.
  • Now add dry mixture to wet mixture, 2 tbsp at a time.
  • Mix well till you get a smooth batter.
  • Transfer the batter to the prepared pan. 
  • Smooth the top with back of the spatula.
  • Sprinkle grapes over the batter.
  • Bake the cake until golden.
  • It'll take 30-35 minute.
  • Check with a toothpick by inserting in the center.
  • If comes out clean, then the cake is done. 

  • Spread the mango jam on the top of the cake. 
  • Remove from the oven after 5 minute. 
  • Cool for 15 minute and remove from the pan. 
  • Slice and serve the yummy cake..enjoy :-)
