Orange chicken is very popular American Chinese dish of Hunan origin. It's a modified version of Old peel chicken of Chinese dish in which they use dried orange or tangerine peel to make chicken. I used fresh orange peel and orange juice to make this dish.I love everything in this dish be it the crispness, sweetness or souness..It's very easy, cheap yet healthy recipe of chicken..so try out and enjoy.. :-)
Ingredients :-
- Boneless Chicken - 500 gm, cut in to small chunks
- Refined oil - 2 tsp
- Garlic - 2 flakes,minced
- Refined oil for deep frying
Garnish :-
- White sesame seed - 1/2 tsp
- Scallion/Green Onion - 1, thinly sliced
- or
- Crushed cashew nuts - 1/2 tsp
- Few chopped coriander leaves
(I used the below 2 as i don't have the above ingredient)
Frying Batter :-
- Corn Flour - 2 tbsp
- All purpose flour - 1/4 cup
- Egg - 1, beaten
- Baking powder - 1/2 tsp
- Ice cold water - 1/4 cup
- Refined oil - 1/2 tbsp
- Dash of salt
Orange Sauce :-
- Orange juice - 1/2 cup
- Orange zest - 1/2 tsp
- Chili sauce - 1 tbsp
- Chicken stock or water - 3 tbsp
- Soy sauce - 1 tbsp
- Sugar - 4 tbsp
- Honey - 2 tsp
- Vinegar - 1 tsp
- Corn flour - 1 tsp
Method :-
- In a bowl, mix all the orange sauce ingredients and keep aside.
- In another large bowl mix all the frying batter ingredients, mix till smooth.
- Mix in chicken chunks, coat well and keep aside for 30 min.
- After 30 min, heat a kadhai/wok with deep frying oil.
- Gently drop in the chicken chunks one by one.
- Make sure it spread out to prevent sticking and over crowding.
- Deep fry until golden brown and completely cooked.
- Take out on paper towels.
- Heat a pan over medium flame with 2 tsp refined oil.
- Saute the garlic until fragrant.
- Gently pour in the orange sauce mixture, stir and cook in low flame.
- Adjust water, chili sauce, salt and sugar according to your taste.
- Toss in the fried chicken, stir well until all sauces absorbed.
- Garnish with the ingredients you have and serve hot with roti/paratha/rice/friedrice.. enjoy.. :-)
